Wild Atlantic sea scallops harvested, shucked, packed, and tagged by Nordic Inc.

The journey begins out at sea aboard the F/V Venture. The vessel is equipped with a dredge that skims the seabed to collect scallops by the ton and hauls them up to the deck. After the crew sorts through the catch, the scallops are shucked, packed into 50 lb bags, and tagged with the exact tracking information about the harvest time, date, latitude and longitude, vessel, and captain.

Once the scallops are received at the Raw Seafoods facility, they go through rigorous testing by their QA department. Prior to being packaged in a variety of containers all product is hand graded for uniformity of size and minimal pieces.

At Santa Monica Seafoods, the scallops are received. The quality assurance department reviews the shipment to ensure proper temperatures were maintained through the entire journey. The scallops are then stored in Santa Monica Seafoods’ internationally recognized FSSC 22000 and ISO 14001 certified facility (the first and only seafood company in the USA to achieve both designations). The scallops are shipped daily via Santa Monica Seafoods’ fleet of refrigerated vehicles to TAPS Fish House & Brewery locations.

When it comes to seafood, not everything is as it seems. Seafood fraud is an alarming issue that compromises the health of both people and the planet. According to DNA testing performed by Oceana, the world’s largest ocean conservation and advocacy organization, 21% of seafood samples in the US were misrepresented as a different species than what they actually were. Of the seafood samples tested by Oceana, scallops were one of the top ten most commonly mislabeled products.

The story starts out at sea where Nordic is celebrating some of its best harvests in decades. Following a dramatic decline in Atlantic sea scallop populations 20 years ago, Nordic worked in close collaboration with marine scientists to assess the scallop biomass and develop a plan to replete stocks. It wasn’t easy, but faith and patience paved the path towards abundance.

Collaboration is key for Raw Seafoods as well. They uphold a strong culture of care for their employees, products, and customers, while working with advanced certifications and sustainable seafood initiatives to exceed expectations for food safety and environmental conservation.

Santa Monica Seafood is in clear alignment, having created the first and only Responsible Sourcing Vendor Program with the goal of applying a percentage of profits to fund ocean stewardship projects.
